Aromatizing is one of the key elements for confectionery industry. The success of a confectionery product depends on aromatic herbs; aromatic characteristics are endless and using some products requires a special attention and a good making technique. Dosing several aromatic compounds determines the final product's taste and fragrance.

Liquid flavorings

These products with a high concentration are indicated to flavour leavened doughs and for all those oven products we want to add a special and fragrant touch to.
We can distinguish between citrus flavourings and aromatic preparations. The former ones are obtained through very complex extraction procedures. Oil inside the rinds of didderent citruses is extracted by carrier vapour or by using solvents, such as ethyl alcohol, and separated by centrifuge later on: from these procedure the lemon, orange or tangerin oils are obtained and have a remarkable aromatizing power. These oils weproduce are fully natural. The lattercategory is the one concentrating complex compositions of different types of natural molecules or naturally identical ones, which, being suitably mixed, offer the chance to create several types of flavourings: panettone (Milanese cake) type, butter, cream, brioche. And then the wide range of fruity flavourings: from banana to apricot, to strawberry, to mango and so on and so forth.

They are high density products with a high sweetening pwer. They are less concentrated than dough flavourings.

They are studied to aromatize Bavarian creams, whipped creams, ice-cream cakes, creams and mousses. They are carried out without air (vacuum-packed) with innovative methods using fruit extracts; for zabaglione a thin egg mixture has been employed without using flour.

These are concentrated flavourings with high aromatic content, meant for industries or for confectionery laboratories that need to follow the cold chain (slaughtering/freezing) with a differentiated cooking of products.
They are studied in order to carry out products for long freezing periods, in order not to waste the flavouring phase during cooking. They are obtained through dehydration and micro-encapsulation procedures of volatile substances with the purpose of obtaining the best yield during the cooking phase.

Dough flavorings

They are employed to flavour creams in general and for short pastries. They represent an option to the use of liquid flavourings, to mix the mixture in a homogeneous way and also to give a final colour to the product. They are obtained by mixing thickners and sugars that can be easily mixed with anhydride and aqueous masses.
